Black Salsify (Scorzonera): Growing from Seed – Sowing & Germination Guide

Black salsify (Scorzonera hispanica) is grown for its long black root, which has a flavour reminiscent of oysters. Here are the germination and growing instructions.

When to sow

Sow from March to May, directly in the final spot; the root does not transplant well.

Planting depth

Plant 1–1.5 cm deep in deep, loose, stone-free soil (pH 6–6.8) so the roots grow straight. Thin to 10–15 cm apart.

Germination temperature

Ideally 15–20°C (at least 7°C). Germination takes 10–20 days.

Watering

Water lightly and regularly, as soon as the soil surface dries.

Light and harvest

It needs full sun. The roots are ready in 120–150 days, from autumn onwards.
