The name habanero means “from Havana”. Habanero peppers are on average 2–6 cm long. Their heat has been measured at 100,000 to 350,000 on the Scoville scale. The habanero's flavour is described as fruity and citrusy with a floral aroma, and it's used in countless hot sauces and spicy dishes.
The habanero pepper originally comes from South America and the Amazon region, and later spread through Mexico. Its species is called Capsicum chinense, because the 18th-century botanist who named it mistakenly believed it came from China!
Today the biggest habanero producer is Mexico's Yucatán Peninsula, where habaneros are an essential part of the local cuisine as a purée or sauce. It's often compared with the Scotch bonnet, as they look very similar. A habanero variety (Red Savina) once held the Guinness World Record for the hottest pepper, until it was overtaken by even hotter peppers such as the Trinidad Scorpion and the Carolina Reaper.
The habanero is among the hottest peppers on the planet. The peppers start off green while unripe and can then turn red, orange, chocolate brown or white depending on the variety. The fruit is about 3–6 cm long. Wear gloves when handling the peppers and keep them away from your eyes.
Habanero peppers need warmth to germinate and fruit. Water them when the soil is almost dry – overly wet soil produces bitter peppers. The habanero is a perennial.
Easy to grow: it just needs rich soil, watering and light.
