“Chocolate” Persimmon – (Chocolate Persimmon – Diospyros kaki)
The “Chocolate” persimmon is a special persimmon variety that stands out for its unique appearance and flavour. Its name comes from the distinctive dark, almost brown flesh it develops when ripe, which looks strikingly like chocolate – although its taste is more complex than simply chocolatey.
Features
Appearance: The fruit is usually medium-sized, round or slightly oval, with glossy orange-red skin that deepens as it ripens. The real “surprise” comes when you cut it! When fully ripe and pollinated, its flesh turns a striking dark brown with faint streaks that give it a marbled look. This transformation is caused by chemical reactions triggered by the seeds after pollination.
Taste & texture: Its flavour is particularly sweet and honeyed, with notes of spice and nuts. Its texture varies with ripeness: it can be firm and crunchy like an apple when just ripe (although it may still be astringent if not fully pollinated), while when fully ripe it becomes soft, juicy and creamy, with a jam- or pudding-like texture.
Ripening: Like other persimmons, the “Chocolate” persimmon should be eaten when fully ripe to enjoy its best flavour. An unripe fruit can be very astringent. The dark colour of the flesh is a sign of proper ripening.
Why try it?
The “Chocolate” persimmon is an excellent choice for anyone looking for something different and unusual. It is ideal eaten straight away, but can also be used in all kinds of recipes, such as smoothies, jams, desserts and even ice cream, adding a unique sweetness and a striking look.
