The pepper is a flowering, herbaceous to shrubby plant of the genus Capsicum, in the order Solanales and the nightshade family (Solanaceae). There are around 50 species of pepper around the world, some with sweet and others with hot fruits.
The plant grows 50–75 cm tall, with stems that are tender at first and later woody, fairly small light green leaves and white flowers borne singly or in groups of 2 or 3. The fruit is many-seeded, green or yellow-green, turning red or yellow when ripe.
Depending on the variety, its shape ranges from long and conical to round or tomato-shaped.
Sweet peppers are larger than hot ones, ribbed and blocky. They are picked 60–80 days after the seedlings are planted out, when they are bright green and before they ripen fully. Rich in vitamins C and A, they are eaten in salads or cooked. They are one of the key ingredients of Greek cooking – in Greek salad, in gemista (stuffed vegetables) and in sauces.
Hot peppers are eaten roasted as a starter or ground into powder and used as a spice. Their heat comes from capsaicin, a compound found inside the fruit.
In Greece, peppers are grown in almost every part of the country, in vegetable gardens and greenhouses, especially in northern Greece. The best-known variety is the green pepper of Nea Magnisia, with its sweet, fleshy fruits.
